Well to translate, it’s Spanish for “Theresa’s Meat” and I am happy to say that Theresa is the Mother, Grandmother, Patriarch of our family.

It began back in 1971 when I was an aspiring young motorcycle racer who was going to win the world on two wheels. One day, my father who worked at a packing house in Los Angeles, called me and said that he had over 20 guys out sick, and for me to get there and help him that day.

Well the rest is history. Since then, not a single day has gone by that I am not pushing meat. Whether selling, cutting, or producing. So after almost 50 years we are bringing that experience and knowledge to your family.

About 14 years ago, a most respected Meat Director for a very large retail chain in Southern California said he had a problem. He wanted to triple his sales of marinated meats in his meat departments, but he needed some consistency. You see, one store would make their marinade one way, another would make it different. He had over 100 stores, and maybe more than that in recipes. He asked us to produce the marinated chicken for him, and Carne de Theresa was born.

Over the years we have sold over 30 million pounds a year of marinated and non-marinated chicken within the Southern California retail market. Well fast forward to today and we see that the buyers for most of the retail markets are at least 2,000 miles away in an office in front of a computer. Now it’s what price, when can you deliver, and are you in our system is how meat decisions are made.

Currently, when you place an order on line from a major retailer, an employee from a third party grocery delivery service will get your order, go to a store close to you, pick your order from the isles, and bring it to you.
